There’s nothing better than a relaxed sunday morning and fluffy american pancake for breakfast!
Both my boyfriend and I looove pancakes.
Unfortunately, I am not a master chef. But I don’t give up and try till it works. It took me quite some time to master this recipe. The problem was that the batter- was always too runny and the pancakes weren’t thick enough. As a result I added more flour. It is very important that the batter is thick.
If you make the batter runny then you can make crepes! I am just not a fan. I love very thick american pancakes.
You can adjust the recipe if you want more than 2 portions 🙂
So I want to share with you our simple but delicious fluffy american pancakes recipe. No wild exotic ingredients needed. Perfect for a lazy sunday morning..
Ingredients (for a small breakfast for 2 😊)
135 grams flour
2 teaspoons baking powder
Butter for cooking
2 teaspoon vanilla extract
1 large egg
50 ml milk
100ml yoghurt
Zest of one lemon, optional
Fresh raspberries and golden syrup and jam, to serve

Instructions
Combine the flour, vanilla extract, baking powder, egg, milk and yoghurt in a medium bowl.
Stir everything to combine.
Meanwhile heat a large frying pan. How hot? Well medium, not too hot and not too cold 😊
Brush oil or butter onto the hot pan.
Spoon the batter into even cakes and let cook until bubbles form on the surface of the cakes—about 2 -3 minutes.
Flip the cakes over and cook until they are golden brown on the other side—about another 2-4 minutes.
Transfer the pancakes to a platter.
Serve immediately with raspberries, maple syrup or jam.
